Hilton hotel offers traditional PNG cuisine - Post Courier

PAPUA New Guinea (PNG) is unique with its own untapped cuisine with various ranges of fresh local produce as ingredients. At Hilton Port Moresby Hotel & Residences, it offers a high standard of customer service and a clean and welcoming environment for people to enjoy international and traditional PNG cuisine. Visitors to Port Moresby city can enjoy different kinds of locally grown fruits, vegetables, greens including deliciously cooked seafood and fresh pork meat also sourced locally from the Boroma Piggery farm near the city. Other local fresh meat include Numondo beef and lamb that are prepared and served to individuals and groups of diners at the hotel's signature restaurant called Mumu. Named after a traditional method of cooking, 'Mumu' which includes both the earthen oven and its layered feast, often prepared as part of a celebration throughout PNG, the restaurant offers a unique culinary experience. At Mumu you can also enjoy fine wines, beers and spirits with delicious dishes prepared in the open kitchen and or served from the mumu pit or while dining exclusively indoors or outdoors in over-water bungalows offering a tropical experience. The Mumu restaurant is open from 5pm to 10.30pm every Mondays to Saturdays for people looking to enjoy traditionally prepared meals for dinner with a modern twist. According to Navin Singh, the executive chef of Hilton Port Moresby hotel and residences, "Papua New Guinea is unique with its own untapped cuisine with various ranges of local produce, using mostly local ingredients." Chef Singh said "at Mumu we roast pigs of various sizes from 40kg to 60kg in weight, stuffed with all local vegetables, spices and greens in the three (3) meters modern made earth oven or mumu pit". "My goal is to continue the pursuit of my passion and dedication in hospitality, within the luxury resorts, by applying my knowledge and experience to deliver business-focused results, as well as developing future leaders in our industry," he said. The work force is mostly of local Papua New Guineans who have been trained and upskilled to that Hilton standard which was something the hotel management had worked hard on in the background. More clients and visitors are expected this year after the formal opening of the Hilton residences which will include 180 luxury apartments, a deli bistro and bar, Hubworks coworking community and retails with stage three of the whole project under the Star Mountain Plaza expected to include more retail, commercial offices and a business hotel as well. Together with the Kutubu Convention Centre, it is the first part of the Star Mountain Plaza project worth about K1.5 billion which commenced in 2015 and it was one of only three global chain-branded hotels in PNG apart from the other two being the Holiday Inn and Crowne Plaza. The entrance of Radisson international at Paga hill will make it to four altogether. Hiton hotel is one of PNG's major tourism development projects that was established by a joint venture between the Government and three major provincial landowner companies that are Petroleum Resources Kutubu Limited (PRK), Mineral Resource Star Mountain (MRSM) and Mineral Resource Ok Tedi (MROT) and it is under the trusteeship of state-owned Mineral Resource Development Company (MRDC). Chef Singh joined Hilton Port Moresby hotel and residences in March last year from his last job in the Arab Republic of Egypt. He is originally from India and is a hospitality professional certified by a French hospitality school and he has over 21 years of "hands‐on" luxury 5-star hotels experiences in Europe, Asia and the Middle East. Chef Singh also gained a three-year diploma in hotel management and catering technology gained from IHM Chennai in India. He was a former executive chef in charge of food and beverage operations of Movenpick Resort Kuredhivaru Maldives and has worked with international hotel brands like Marriott, Accor and Hyatt in Vietnam, Singapore, China, Egypt, France, Italy and India plus many others. Chef Singh was awarded a gold medal in GICC (Great India Culinary Challenge) 2007, under the category of professional hot cooking and a team championship award for the year 2007 also at GICC as part of his achievements. He was also awarded as the Summer Food Show Foodie for Times Now News Channel, Chef of the year IFCA 20013 and Commitment to Excellence Certificate by well-known expatriate chefs in Paul Kistler, Philip Pinout, Mathew Cropp, Fredric Moliene, Jean Coulot and Maria Free. Chef Singh had also worked under Michelin Star awardee and French Chef, Michel Roux (La Brasserie). A Michelin Star is awarded annually to restaurants offering outstanding cooking, taking into account five universal criterias; the quality of the ingredients, the harmony of flavours, the mastery of techniques, the personality of the chef as expressed through their cuisine and, just as importantly, consistency both across the entire menu and over time. Hilton hotel is located on Wards Road, Hohola suburb, National Capital District and is about 10 minutes' drive from the Jacksons international airport.
